Tuesday is National Pancake Day

Pancakes IMG_7947National Pancake Day falls on Fat Tuesday, the day before Lent begins.

IHop is offering a free short stack of buttermilk pancakes to celebrate the day. They ask customers to make a donation to a charity.

I’m on a low carb diet, so I don’t eat bread regularly or cakes or pies.

However, I still make pancakes. I rotate flours to avoid allergies. Lately, I’ve made barley, buckwheat, and spelt pancakes. For my last batch, I mixed those three flours together. It was better than just buckwheat alone, which was slightly dense.

Here’s my pancake recipe:

1 ¼ cups flour

1 T. baking powder

1 egg

1 cup of milk

2 T. olive oil

Measure out the dry ingredients. In a separate bowl, whisk the egg, then add the milk and olive oil. Mix the ingredients, but don’t over stir. It will make tough pancakes. Turn over when the pancakes look bubbly.

My mom made small pancakes, and I like make ones like she made.
