
Recently, I suggested consumers try a stew with turnips, parsnips, and rutabagas. They're root vegetables my mom used, and they add interest to stews.
When I was at the co-op, I saw a soup with burdock. Burdock, a slender root vegetable that grows to about two to thee feet, resembles the sweet taste of parsnips or jersalem artichokes.
The burdock, like Jersalem artichokes, tasted fine, but the taste is so different, it isn't something I'd like to eat regularly.
